Advantages of owning a Blast freezer



A blast freezer, also known as a shock freezer, is a type of freezer that rapidly freezes food to its core. This means that food items or ready-to-eat meals can be prepared and stored gently.

The blast chiller can reach the desired storage temperature, which is usually between -10 °C and -18 °C, in a matter of hours. For example, a 90 °C hot dish can be cooled down to 3 °C within 90 minutes and then frozen within 240 - 270 minutes.

Choosing the right sized Blast Chiller

Also, it will depend on how much product you need to process at a given time? Blast chillers come in a variety of capacities ranging approximately from 14 Kg to 590 Kg at a time, and they typically use 2-inch deep pans that can hold about 5 Kg of food product (depending on its density).

This produces tiny ice crystals, whereas, in freezers, these ice crystals are larger which will form on the frozen products, causing cell membrane damage. Because blast freezers do not damage the cell structure, essential vitamins, trace elements, and minerals of the food are preserved.

Even hot or still warm food can be frozen in a blast freezer using a rapid cooling function, which is not possible in standard freezers. Furthermore, the food's quality and taste are preserved, and the products retain their consistency. After defrosting, the food also appears to be freshly prepared.
